It seems you are full of fear and obviously fear is your biggest enemy.

Please do not think about "big" project experience any more and nobody wants you to be an architect in a few years. Company hiring people is because they need people to solve their problems and most of the time, the problems are not as big as you might think. Knowledge wise, I believe you have enough dough to spare and working expeirence is much more important than another 3 years' book work. So, If you decide to stay in Canada, do not jump back and forth.

BTW, GRE is not required for Master's education in Canada and it is only for US.
